🌿 Ingredients

  • 1 (8 oz) block cream cheese, softened
  • 3/4 cup pitted Castelvetrano olives, roughly chopped
  • 1/4 cup olive brine
  • 1 teaspoon lemon zest
  • 4 oz creamy blue cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1–2 bunches of celery

1️⃣ Prepare the Filling

  • In a medium bowl, beat the cream cheese until smooth.
  • Add chopped olives, olive brine, blue cheese, salt, pepper, and lemon zest.
  • Mix until fully combined into a creamy, slightly chunky filling.

2️⃣ Prep the Celery

  • Wash celery stalks and cut into sticks about 4 inches long.
  • Optionally, trim the ends for uniform pieces.

3️⃣ Fill the Celery

  • Use a small spoon or butter knife to fill the hollow of each celery stick with the cheese mixture.
  • For a cleaner presentation, a piping bag works perfectly.

4️⃣ Chill and Serve

  • Arrange filled celery sticks on a serving platter.
  • Chill in the refrigerator for at least 30 minutes before serving.

  • Use Castelvetrano olives for their mild, buttery flavor.
